Creamy Thai Omelette with Lump Crab Meat

The traditional Thai omelette, called "khai jiao", is one of my favorite quick and easy go-to street food dishes. It's typically made with minced pork, fried in oil until the edges are crispy, and served over rice often with a side of ketchup.

Khao khai kon is a different type of Thai omelette. Instead of being fried to be crispy with a whispy edge, the khao khai kon, sometimes called a "creamy omelette", is cooked lower, slower, and more gently, leading to a soft blanked of eggs that are more like a very soft scramble than an omelette. The eggs are gently draped over a large scoop of rice.

I ordered a creamy omelette with lump crab meat for lunch the other day. Because it came with crab meat, at 135 baht it was much more expensive than a typical Thai omelette. However, I was glad to pay a little extra for such a rich and delicious meal! The omelette and crab meat together could be a bit too rich, but an added splash of bright green Thai seafood sauce cut through the richness with a tangy, spicy, sour kick.
