It's a simple dish, but chicken rice is one of my favorites. Hainanese chicken rice has become a Singaporean hawker stall classic and can be found in various forms all throughout Southeast Asia.

Chef Enoch Teo, the Singaporean chef who rose to fame on The Next Iron Chef Thailand and Top Chef Thailand, has brought his elevated version of this classic dish to Bangkok at his popular restaurant Fatt Chicken.

I tried Chef Enoch's Hong Kong-style char siu the other day and loved it and returned to Siam Paragon shopping mall this week to order a chicken rice lunch set.

Chicken rice is deceptively simple. There are plenty of ways to mess the dish up. Sometimes the rice, which is cooked with chicken fat, can be too oily. Sometimes the poached chicken can be too tough or chewy. This dish, however, was pretty much perfect.

The chicken was perfectly poached and tender. I topped it with a bit of the provided dark soy sauce which gave it a bit of an extra salty sweetness. The set menu came with three types of dipping sauce for the chicken: a fermented chili sauce, a ginger-based sauce, and a classic spicy chicken sauce. The set was served with a bowl of brown rice and a bowl of chicken broth and a few strips of Chinese-style omelette.

I ordered the small size, which was enough for me, but if you were hungrier, you could also order a medium or large serving which comes with more chicken.
