Hong Kong Honey Char Siu with Fried Egg on Rice

Slim Pig x Fatt Chicken is the brainchild of Chef Enoch Teo, an award-winning Singaporean chef who trained in Michelin-starred restaurants and starred in The Next Iron Chef Thailand and Top Chef Thailand. The modern Chinese diner, located on the 4th floor of Siam Paragon shopping mall in Bangkok, Thailand is a modern comfort food concept that brings together the Hong Kong roast pork tradition and Singapore's chicken-rice culture under one roof.

I have yet to try Chef Teo's famous Hainanese chicken rice, but when I was at Siam Paragon the other day, I decided to stop in for lunch to eat his legendary Hong Kong-style honey char siu (Cantonese barbecued pork).

I ordered the char siu rice bowl, which came in a set alongside a bowl of clear broth. The rice was topped with char siu, a fried egg, and some sauteed kale. The char siu was excellent, some of the best I've ever had! The slices of pork meat were thick and tender, and had an amazing smoky, sweet, savory glaze with a hint of caramelized honey and lightly charred edges.

There's nothing super fancy about a bowl of barbecued pork on rice; there's a reason that this dish is a popular comfort food. The meal was incredibly filling, and every bite was packed with flavor.

I'll definitely be coming back to see what Chef Teo can do with chicken rice, another deceptively simple dish.
