Braised Pork, Stewed Cabbage, and Tofu

The restaurant that I was perhaps most excited to visit on my recent visit to Taipei, Taiwan was Wang's Broth, a nearly 50-year-old street food shop inside the city's famous Huaxi Market near Longshan Temple specializing in braised pork which has won Michelin's Bib Gourmand award for the past several years.
We ordered several dishes to share so that we could try many of the shop's signatures. Braised pork is one of Taipei's most popular local dishes, and also one of my favorites.
After ordering, we sat down at a small table on the side of the busy market street to eat.
The first dish, and in my opinion the best one, was braised pork with mushroom served over a bowl of rice. The pork belly was slow cooked in a big pot until so soft and tender that it melts in the mouth. Every piece of pork was rich and flavorful and had a silky, soft texture from the long cooking process. The mushrooms added a bit of earthiness to cut the sweetness of the braised pork, and each bite was a well-rounded combination of tastes and textures.
We also ordered braised tofu. The firm tofu was braised in the same secret ingredient "black gold" broth as the pork and had become infused with all of its rich and delicious meaty flavors.
The cabbage was also stewed in the house black gold broth along with a few pieces of silky, fatty pork belly. It was not overcooked, and kept just a bit of a crunch, which I appreciated.

All in all, everything was excellent, and this may have ended up being my favorite meal that I had in Taipei! I'll definitely be returning on my next visit.

Menu
The menu at Wang's Broth is printed in both English and Chinese. Just write your table number in the top left box and the quantity of each item that you'd like to order on the right-hand column of the paper menu and take it to the staff working at the front counter. You will pay when you order, and the food will be delivered shortly to your table.

Location
Wang's Broth is located inside of Taipei's Huaxi Night Market at 108, Taiwan, Taipei City, Wanhua District, Huaxi St, 17之4號攤位153號. It's a short walk from Longshan Temple MRT Station.
Huaxi Night Market is a covered market stretching three blocks from south to north and is one of the oldest in the city. The market is famed for its snake soup, but I wasn't quite brave enough to try it on this visit.
