Stir Fried Spicy Basil Pork (Pad Kaprao) at Phed Mark

Establish in 2019 by Bangkok-based food vlogger Mark Wiens, Phed Mark (a play on the phrase "phed maak", meaning "very spicy" in Thai, and on the name of the owner, Mark Wiens), serves just one dish: pad kaprao, or spicy basil stir fry.

Pad kaprao is my favorite Thai street food dish. It's a spicy, savory dish of minced meat (traditionally pork or chicken) stir fried in a smokey wok with hot Thai chilies and handfuls of peppery holy basil.

The kaprao at Phed Mark isn't your typical street food fare. The restaurant uses high-quality ingredients cooked over high heat in an oiled wok to impart it with a unique wok hei smokiness that you won't typically find in other plates of kaprao, and each plate of kaprao is topped with duck eggs which have a richer yolky flavor than the traditional duck eggs.

I ordered a plate of pork kaprao and paid 25 baht extra to get a second egg on my kaprao. When you place your order, you can choose how hot you want your dish. I was really tempted to try the level 5 (very hot), but in the end, I played it safe and went for level 3 (recommended). I have a decent spice tolerance and was really happy with the level 3 spiciness.

In my opinion, it was actually the eggs that pushed the kaprao to the next level. This might sound like an odd thing to comment on, after all, an egg is an egg... but the fried duck eggs were some of the best I've ever had. The yolks were completely runny (exactly how I like them), and the edges were fried to a crisp.

Menu

I ate at Phed Mark a few years back, and the menu has really expanded since then. The first time I visited, they sold only pork and beef kaprao, but today, the restaurant offers vegetarian kaprao with tofu and mushrooms, as well as options with sour fermented sausage, chicken, wagyu beef, and squid.

You can choose how spicy you want your dish (I recommend going with level 3 for a slightly spicy but manageable level of heat). Every plate of kaprao comes with one fried duck egg, and you can add extra eggs for 25 baht each.

Phed Mark is located just down the steps from BTS Ekkamai Station at 300 Sukhumvit Rd, Phra Khanong, Khlong Toei, Bangkok 10110. The restaurant opens at 10:00am. Arrive early or be prepared to wait up to 20-30 minutes for your meal.
