Shui Zhu Yu, or Spicy Sichuan Boiled Fish

Originally founded in Beijing, YONNY is a fast-growing Chinese restaurant chain specializing in suancai fish (酸菜鱼, or shui zhu yu), a Sichuan dish of poached fish served in a spicy, sour broth with fermented mustard greens.
When a branch opened up in Bangkok not too far from where I live, I decided to pay it a visit for lunch to try this famous

The fermented greens give the soup a tangy flavor that balances the richness of the broth and the soft, tender fish. The dish is beloved for its complex combination of sourness, numbing spice, savory depth and unxpectedly mild heat (you wouldn't guess it from how many chilies are in the soup... just don't bite into one!). It is typically served as a shared main course accompanied by steamed rice, and YONNY has an entire bar set up where you can scoop different types of rice into a bowl to take back to your table.
