Bún Thịt Nướng, or Barbecued Pork Noodles

Da Lat is a mountain town in southern Vietnam just a few hours north of Ho Chi Minh City. One of the South's most famous dishes is bún thịt nướng, or barbecued pork noodles, and I was on the lookout for a good bowl of this dish for my dinner.

Bún thịt nướng is something like southern Vietnam's version of the North's bún chả. Both dishes combine grilled pork with rice noodles, fresh herbs, and a sweet-savory fish sauce. Bun thit nuong, however, swaps bun cha's grilled pork patties and separate dipping broth for slices of grilled pork served directly over the noodles. The bowl is then topped with fried shallots, roasted peanuts, sliced green onions, and plenty of fresh herbs and vegetables, creating a dish that is light and fresh.
