After going viral on YouTube, Roni's Mac Bar in Waco, Texas has quickly become a local favorite.

Roni's doesn't exactly have a menu. Instead, guests can choose whatever ingredients or toppings that they want to build their own custom mac and cheese bowl or grilled cheese sandwich.

I was in the mood for something with a Texas twist, and created my own brisket barbecue mac and cheese.

I built my own mac bowl with pepper jack, Texas brisket, jalapeno, bell pepper, and a drizzle of barbecue sauce.

Since each mac bowl is custom made, I kept an eye on the queue screen for my order to come up. It was only around 5 minutes before I was enjoying my lunch. I gave the ingredients a good mix before digging in.

What can I say? Everything was excellent and just the way I like it (because, of course, I chose all of my favorite ingredients myself). The brisket was smoky and soft, and just fell apart in my mouth. The barbecue sauce was sweet, tangy, and a little spicy, and it went so well with the meat, pepper jack cheese, and peppers that I added to my mac bowl.

There's a nearly unlimited number of combinations you can choose, and I bet pretty much anything would be great.

There's no set menu, instead, every dish is totally customized. You choose your own ingredients, sauces, and toppings from the list of options, so that your mac and cheese or grilled cheese sandwich will be exactly the way you like it.

Roni's Mac Bar is located in Union Hall, an "urban eatery" and market-style food hall with more than 25 vendors serving up a variety of meals, dishes, and cuisines.

Union Hall is located in downtown Waco at 720 Franklin Ave, Waco, TX 76701. There is limited dedicated parking on-site, and plenty of both paid and free public parking lots and garages in the nearby area.
