Collin Street Bakery is a well-known bakery that originated in Corsicana, Texas. Founded in 1896 by Gus Weidmann, a German immigrant, and Tom McElwee, the bakery started as a small operation but has since gained international fame for its quality baked goods.

My favorite cookies at Collin Street Bakery are their classic chocolate chip pecan cookie (a taste of Texas!), their cherry ice box cookie (an old-fashioned classic), and their fruit nut cookie (a cookie that incorporates some of the ingredients of their world-famous fruitcake).

Price

Cookies cost around $0.75 each, depending on the flavor. It's inexpensive - and a lot of fun - to sample lots of different flavors.

Location

Collin Street Bakery has four locations, all of which are located in Texas. Two, including the original historic bakery, are located in the small town of Corsicana, Texas. Another is located in Lindale, Texas. The easiest to visit is in Waco, Texas right off of I-35 and just north of the Baylor University campus. It makes for a great stop when driving down the highway between Dallas and Austin.
