Pulled Pork Plate

Coach's Bar-B-Cue in the small town of McGregor, Texas (17 miles outside of Waco) is home to some of the area's most beloved barbecue.
I stopped in on a day trip to nearby Mother Neff State Park after a morning of hiking for a fantastic filling meal.
I ordered the one-meat plate, which comes with your choice of pulled pork, brisket, sausage and more with two sides.

All of the meat at Coach's is slow cooked over pecan wood giving it its iconic Texas flavor. The pulled pork is so soft and tender that it just falls apart and melts in your mouth. House barbecue sauce is provided (I highly recommend their "sweet heat" sauce), but the pork is so moist and tender that you genuinely don't need any sauce at all.

It was really hard to decide which sides I wanted. The onion rings looked amazing, but I ended up ordering one of my all-time favorite barbecue sides: fried okra.
Okra can be tricky to get right. If it's not cooked perfectly, the inside can be chewy and slimy. This okra was excellent. The outside, lightly battered and fried, had a pleasing crunch, and the inside had a wonderful bright flavor and perfect texture.

The beans were also a highlight for me. Sweet, rich, and with just a hint of smoky heat, they provided a fantastic balance to the pork.

A buffet counter along the back wall of the restaurant offers self-serve sides and fixings: pickles, onions, white bread, and cornbread muffins. White bread is typically served with barbecue so that you can make a sort of sandwich or sop up all of the delicious drippings and sauces so as not to miss a single bite.
The cornbread muffins were a welcome addition, providing a sweet bite that went especially perfectly with the beans.
