Vegetable Yellow Curry by Lin's Café, Savannakhet, Laos

Kaeng Kari, or Vegetable Yellow Curry

by Lin's Café, Savannakhet, Laos

Like many foreign expats living in Thailand, I occasionally have to go on a "visa run" to a foreign country so that I can apply for a new visa. I usually go to Phnom Penh, Cambodia, but this time I wanted to try something new. I decided to take the bus up north to Savannakhet, a Laotian border town and home to one of Thailand's foreign consulates.

While I was in Savannakhet, I paid a visit to the famous Lin's Café. Like Istanbul's Pudding Shop, Lin's is a backpacker's institution, a legendary stop on the "Banana Pancake Trail" across Southeast Asia. I visited one afternoon to order a plate of yellow curry and an ice cold Beer Lao.

Yellow curry is sweet and mild with a softly spicy twang. This curry was stuffed full of vegetables, including onion, potato, carrot, broccoli, cauliflower, and green beans, and was served with a big cupful of filling white rice which soaked up all of the delicious yellow curry soup.

There's no meat in this dish, making it great for vegetarians. It was super filling, and I really enjoyed every sweet and savory bite!

It was a warm and hearty dish that kept me full for my day of exploring this sleepy Laotian border town.

Yellow curry goes great with a bottle of Beer Lao Dark.

Beer Lao is, in my opinion, the best beer in Asia. This award-winning beer comes in several excellent varieties.

The food is excellent, and Lin's is known for serving the best hamburgers in the city if you are missing a taste of Western food while abroad. They also serve excellent coffee.
