Tom Yum with Minced Pork

I really enjoyed a bowl of wonton tom yum noodles at the nondescriptly named "Pork Tom Yum Noodle" restaurant at MRT Ladphrao Station in Bangkok, Thailand. I returned this week to try another dish, and this time, I opted for the minced pork tom yum egg noodle soup.

You can choose what type of noodle you want to have in your soup, and of course, I chose my favorite, egg noodles. The noodles were covered with an almost unbelievably generous serving of minced pork and were topped with crispy pork rinds, chilies, and chopped green onions.
Like the dish that I ordered last time (pork tom yum wonton soup), the broth was sweeter than traditional tom yum soup broth. I added a bit of chili and fish sauce to balance it out to my taste. That’s one of the nice things about these kinds of Thai noodle soups; starting with a sweeter base lets each diner season it exactly how they like. A spoonful of fish sauce adds depth and salty umami, chili brings the heat, a pinch of sugar boosts the sweetness, and a dash of vinegar brightens everything with a tangy, sour kick. It’s a choose-your-own-adventure of flavor, and the sweet broth makes a great starting point.

Pork Tom Yum Noodle is located inside the small community mall at 469 Ratchadaphisek Rd, Chom Phon, Chatuchak, Bangkok 10900 just outside of the Lat Phrao MRT station's park and ride exit and near the interchange with the MRT yellow line monorail.
