Pad Thai Kung, or Shrimp Pad Thai in Bangkok, Thailand
by Thep PadThai (the latest restaurant by food vlogger Mark Wiens)
A few weeks ago, I ate at Phed Mark, the pad kaprao restaurant created by popular Bangkok-based food vlogger Mark Wiens. It turns out that he has also opened a second restaurant, this one specializing exclusively on pad Thai. I recently made a trip out to Sukhumvit Road for lunch to see what all the buzz was about.

Pad Thai is a stir-fried noodle dish typically made with peanuts, green onions, scrambled eggs, firm tofu, and dried shrimp and a sauce made with tamarind juice, fish sauce, palm sugar, and aromatics like garlic, shallot, and chili pepper. The dish is traditionally served with a side of green onions, bean sprouts, and a wedge of lime. At Thep PadThai, they also offer the option to order your pad Thai topped with a fried egg or two (or three!) according to your preference.
When my lunch was served, I was immediately impressed by the portion size and generous number of shrimp in the dish. The pad Thai had a nice smoky flavor from being cooked over a flame in a wok. I ordered a level 3 spicy pad Thai, which was a bit unusual, since it's not traditionally a very spicy dish. I like spice, though, and usually add some extra chili to my pad Thai anyway, so the heat was a nice addition.

I've had pad Thai wrapped in a thin blanket of egg, but I haven't ever had it served topped with fried eggs the way that it comes at Thep PadThai. I always appreciate a good fried egg on my Thai food, especially when it's cooked correctly: with crispy edges and a very runny yolk! I liked the way that the yolk broke and coated the noodles, adding a little bit of smooth richness to each bite.
Unlike traditional pad Thai which uses thick, flat wheat noodles, the dish at Thep PadThai uses thin noodles which seem to hold the sauce and flavors better. It gave the meal a different texture from the pad Thai that I'm used to.
I really enjoyed my meal and left very full and happy.
The restaurant is definitely more expensive than average. At 269 for a plate of shrimp pad Thai, the dish costs more than double what it would in a more local eatery. However, Thep PadThai is clean, air-conditioned, comfortable, and conveniently located, and makes use of high-quality ingredients. The portion sizes are large, and they aren't stingy with the shrimp. Overall, it's definitely worth stopping by for a delicious, super filling lunch.
