Pad Thai Khor Moo Yang, or Pad Thai with Grilled Pork Neck

I don't eat pad Thai all that often. I like it enough, but it's far from my favorite Thai dish. In fact, pad Thai isn't even a really traditional Thai dish. It was created in the 1930s as a way for a nationalist prime minister to create a unified national identity (check out my writeup on the secret history of pad Thai if you want to know the full story).

When I do have pad Thai, I want it to be something special. This week, I happened to be in Siam Square, and I stopped in at Pad Thai Fai Ta Lu, a Michelin Bib Gourmand award-winning pad Thai restaurant.

While pad Thai is traditionally made with prawns, the specialty here is the pad Thai khor moo yang, or pad Thai with grilled pork neck. I have never had pad Thai like this before, and I was really intrigued to give it a try.

It was a little bit expensive (270 baht, or $8 USD), but I ordered the famous pad Thai khor moo yang. After placing my order at the entrance to the narrow shophouse-style restaurant, I climbed up the stairs to the seating area on the second floor.

My pad Thai arrived after just a few minutes, and it looked delicious.

The grilled pork was still steaming and was glistening with delicious pork fat. It sat on top of a mountain of thin glass noodles (more like vermicelli than the traditional thick, flat pad Thai noodles).

The pad Thai was served with the requisite bean sprouts, spring onion, lime, chili flakes, and crushed roasted peanuts, but also came with a "namtok", or "waterfall"-style grilled pork sauce. This spicy, savory, and umami sauce is typically used to dip grilled pork in, but I poured the entire cup over my pad Thai. It gave the dish a strong, rich, spicy, smokiness that really elevated the flavors.

The pork meat was super soft and delicious. It had a wonderful smoky flavor from the grill and was sweet, savory, and perfectly done.

I was really impressed with this dish. While pad Thai is not necessarily my favorite Thai meal, I would 100% return here to have this dish again.

Location

Pad Thai Fai Ta Lu has two locations. I visited their convenient Siam Square branch which is located at 430 2 Soi Siam Square 10 Pathum Wan, Bangkok 10330. It's just a short walk from BTS Siam, one of the busiest interchanges in the city and is very easy to get to.

Located near Chulalongkorn University, this location gets crowded with students during the lunch rush!
