Khao Soi Pad Sai-oua, or Northern Thai Sausage Curry Noodles

Khao soi is a northern Thai noodle dish consisting of soft egg noodles served in a rich, creamy curry broth made with coconut milk, spices, and chili. It is typically served with chicken and topped with a handful of crispy fried egg noodles, pickled mustard greens, sliced shallots, lime, and chili oil. Khao soi was once named the "best noodle dish in the world" by Taste Atlas and is one of my very favorite Thai noodle dishes.

Though it's mostly eaten in the northern provinces, you can find some really great khao soi restaurants in Bangkok as well. One of the most renowned is Ong Tong, a restaurant specializing in this delicious noodle dish.

Stir fried khao soi, or "dry khao soi", can sort of be described as northern Thailand's answer to pad Thai. Rather than being served up in the traditional style as a noodle soup, the noodles are stir-fried dry, tossed in a curry sauce, and plated up with the traditional khao soi toppings.

I ordered the khao soi pad sai-oua, or stir fried khao soi served with northern Thai sausage. Sai-oua is a popular northern Thai sausage made from coarsely chopped fatty pork flavored with all sorts of traditional Thai flavors like cilantro, shallots, chili, garlic, galangal, and kaffir lime leaves.

The sausage itself is also among my favorite Thai foods, and I really enjoyed it served with a plate of khao soi noodles. It wasn't too spicy, nor was the khao soi curry, but it was rich, delicious, and extremely satisfying.

The food at Ong Tong is a bit more expensive than a regular bowl of noodles in Bangkok, but considering the high-quality ingredients and serving size, a meal at Ong Tong is worth the price. Expect a dish to cost between 150 and 200 Thai baht ($5-6 USD).
