Hill Country Chorizo and Bacon Breakfast Tacos

We were up early in San Marcos, Texas, excited to hit the river for some early morning tubing, but first, we needed something to eat. Upon a local recommendation, we decided to stop in at the famous Loli's Cafe, which opened in 2005 inside a renovated self-service carwash and quickly became a San Marcos student and local favorite for their delicious breakfast tacos and sweet cream coffee.

Texas-style breakfast tacos are served wrapped in a warm, fresh tortilla and stuffed with all sorts of filling ingredients. We ordered two: chorizo, egg, and cheese and bacon and egg. Both were phenomenal!
The bacon was crispy and almost burnt - exactly the way I like it, and the generous portion of cheese melted over the bacon and eggs to hold everything together. The chorizo was scrambled up and cooked with the eggs to infuse them with delicious, savory chorizo flavor. The chorizo and egg taco was served with a fresh and spicy salsa verde, which added a kick to the already tasty breakfast. Eating breakfast tacos tends to be messy at the best of times, but I was impressed with how well Loli Cafe's tacos held together.
The fresh coffee is highly recommended as well. It's nothing fancy - strong, black coffee with a splash of sweet cream - but it went so well with the breakfast tacos, cutting through some of the heavy richness of the meat and eggs.

There is no inside dining at the tiny Loli's Café. You can either get your food to-go at the drive-through window, or park and walk up to order from the front counter window. You can sit in your car to eat your delicious breakfast, or take it for a picnic at one of the city's several beautiful local parks.
