Eggs come in so many different forms. They are one of the most versatile foods of all time! You can have scrambled eggs, fried eggs, boiled eggs, poached eggs, and so many more... but have you ever had a grilled egg?

Khai ping, or grilled eggs, are a Thai street food snack that is often found at markets throughout the country.

Eggs are skewered on bamboo sticks and grilled over charcoal until fully cooked. Because of the way that they are grilled, the yolk and white scramble together within the shell, giving the entire cooked egg a uniform pale yellow color and rich flavor.

The eggs are typically served three on a skewer, making them a perfect snack for enjoying while you explore an outdoor carnival, fair, or market.

This snack is traditionally served with seafood sauce, a spicy green sauce made from green chili, garlic, and lots of fresh herbs. It's a slightly sour and moderately spicy sauce that really brightens up any sort of Thai dish!

When you order khai ping, a small bag is filled with seafood sauce, and then the skewered eggs are placed inside so that they can soak up some of the spicy flavors.
