Sri Lankan Deviled Pork with Noodles

Wherever I went in Sri Lanka, I always came across "deviled" dishes on the menu. Having grown up in the southern United States, the only "deviled" food I knew of were deviled eggs (boiled eggs whose yolks have been blended with mayonnaise, mustard, and all sorts of spices), and I couldn't imagine what "deviled pork" might be.

One day while driving between Kandy and Nuwara Eliya in Sri Lanka, I stopped in at a small roadside restaurant and guesthouse for lunch. I asked the owner what his favorite dish on the menu was, and he recommended that I try the deviled pork. I decided to give it a try, and soon he returned with a big plate of Sri Lankan egg noodles served with a generous portion of grilled and deviled pork.

"Deviled" here means "spiced". It refers to the rich blend of spices that deviled dishes in Sri Lanka are cooked with. The dish is a type of "dry curry", where the meat is cooked in a mix of spices until slightly caramelized, then stir-fried with peppers, onions, and more spices.

It's similar to a sweet and sour dish... but sweet and spicy would be more accurate. While you can definitely get this dish hot and spicy, it's generally relatively mild, with the flavors of the juicy meat and spice blend packing a powerful delicious punch in your mouth.

The pork was served with a big pile of Sri Lankan egg noodles stir-fried with vegetables. The dish was incredibly filling and so tasty.

Menu and Prices

Prices are reasonable. Deviled pork with noodles cost 1850 rupees.

Location

The Ramboda Green Hills Resort and Restaurant is located at 2MXX+CJ6 Green Hills Resort, Ramboda, on the A5 road between Kandy and Nuwara Eliya, Sri Lanka. It's a great place to stop for lunch on the drive between the two cities and has incredible views.

The owner is a great guy and super friendly. There is also a guesthouse on-site with amazing views. If I had had more time, I would have loved to spend a night.
