Stir-Fried Noodles with Basil and Northern Thai Sausage

Lay Lao is a family-owned Michelin award-winning restaurant in Bangkok, Thailand's Ari neighborhood specializing in Issan (northeastern Thai) cuisine. Their specialty is somtam (spicy papaya salad), but their entire menu is full of amazing north and northeastern Thai dishes.
On a recent visit, I ordered stir-fried noodles with sweet basil, chili, and sai oua (northern Thai sausage). Sai oua is one of my favorite northern Thai foods! The richly flavored, mildly spicy sausage is prepared from coarsely chopped fatty pork seasoned with lots of herbs like lemon grass, kaffir lime, garlic, and shallots. The sausage is traditionally dried before being grilled, giving it a perfectly snappy skin.
This dish was made from thin noodles, reminiscent of angel hair pasta. The noodles were tossed with dried chilies, a few hot fresh chilies, sweet Italian basil leaves.
It wasn't a kraprao (basil stir-fry), because the type of basil was different. Sweet basil has a lighter, softer flavor than the strongly herbal and peppery Thai holy basil typically used in Thai dishes. The amazing flavor of the herbal sausages gave every bite of the delicate noodles a punch of taste.
