Danbing, or Rolled Egg Pancake

It was an early morning in Taipei, Taiwan, but I was already out and about exploring the city. I decided to start the morning with a delicious filling breakfast, and stepped inside Mei Zhen Doujiang Breakfast Restaurant for a bite to eat.
You can find little breakfast shops like this all over Taipei. They usually open before dawn and stay open until 11am or so. They are popular with people on the way to work or school, and though they can get crowded, usually serve the food very quickly for people in a rush.

I started with a cup of chilled soy milk and youtiao, a staple breakfast combo. Youtiao is a soft, fluffy, slightly sweet, deep-fried dough sometimes referred to as a "Chinese donut". I enjoyed the light snack and cool, refreshing soy milk while waiting for my main breakfast dish to arrive.

The main course was danbing, a Taiwanese rolled egg pancake. Like many foods that are popular in Taiwan, this dish traces its roots to mainland China and arrived with the Kuomintang following the end of the Chinese Civil War in 1949. Over the years it's evolved into a uniquely Taiwanese breakfast staple with the addition of sweet potato starch to the batter, which gives the pancake a characteristic chewy texture.
The danbing I had was rolled up with egg and ham as the filling and served with a sticky and rich sweet and savory dark soy sauce to dip it in. The breakfast is simple but flavorful and filling, a delicious and quick early-morning choice for busy people on their way to work or school.
