After a day of hiking and exploring in the famous Big Bend National Park in far western Texas on the USA-Mexican border, we stopped in at the Starlight Cantina in tiny Terlingua, Texas for brisket and queso nachos and a delicious prickly pear cactus margarita.

This delicious appetizer starts with a sturdy base of thick-cut tortilla chips served alongside a bowl of succulent, smoky beef brisket that practically melts in your mouth. The chili-infused queso (made from rich, delicious, melted cheese) that comes with the chips and brisket is served with a portion of pico de gallo—bursting with the flavors of ripe tomatoes, crisp onion, chili, cilantro, and lime juice. Served hot and ready for devouring, these nachos are meant to be shared among friends and loved ones because the portion is huge!
